WHAT WE’RE EATING THIS WEEK

As I was meal planning for this week, I realized “ummm, our family rarely sits down to eat together anymore so why am I still trying to schedule meals?”

As an almost-empty nester mom, my kids are older and very busy with sports and jobs, so my approach to meal planning is shifting (yet again). ‘Tis the life of a mother as her kids keep growing up. (One of a mother’s best qualities: flexible as needed)

I threw out the idea of scheduling a meal each day because it’s literally pointless. Most days we’re not all here at the same time for supper anymore so instead of trying to fit a square peg in a round hole, I decided to pick a couple meals to just have ready at anytime this week and it’s working out great!

THIS WEEK’S MEAL PLAN:

MEALS:

SNACKS:

  • homemade lunchables
  • granola bars
  • peanut butter & jelly sandwiches
  • smoothies

BREAKFAST: chorizo, egg, and potato burritos

DRINKS: In the summer my family loves that I keep fresh tea and lemonade in the fridge so it’s easy to grab and go!

So much feedback on social media from you all when I shared these in my stories and it was a resounding “I need ideas!” across the board. I will keep sharing the best I can! Happy summer!
