MENUS,  SUMMER

MEAL PLAN: JUNE 10TH-16TH

Milani and Aniston are at the pool every day but today Mom and Dad finally went! Both kids were brave and attempted a backwards dive and although it looked a little rough, they did it! Dad had to prove to everyone he’s still got it by doing one off the diving board. I decided to have no part in that and opted to slowly make my way to the shallow end and enjoy the refreshing (chilly) water. It was a great Sunday and I’m so proud of myself for making this a priority. Aniston works with some really good kids and we got to play a game of 21 in the pool with them all. So much fun!

Adam and Milani were camping this weekend again so I whipped up our meals with no distractions. I am still loving how I’m doing it for the summer. I don’t think it’s something I’ll continue during the school year, but it sure is working great for busy summer schedules!

One of my best tips for meal planning: SHOP AT HOME FIRST!

Look at what you already have and see what meals you can make out of that first before you go spend anymore money. I had a box of stuffing, 3 cans of chicken gravy, and lots of frozen corn leftover from the holidays I wanted to use so I thought a mini-Thanksigivng meal would be so yummy! All I had to do was buy the chicken…score! I also had a box of Hamburger Helper so about halfway through the week I’ll whip some of that up and switch up the chicken gravy for beef gravy that I already had on hand!

I had some leftover cheese brats from last week’s meal plan so I used those for breakfast! I absolutely hate waste, so I am always finding ways to use what I have and make it work.

THIS WEEK’S MEAL PLAN:

MEALS:

  • GRILLED CHICKEN, MASHED POTATOES & GRAVY, CORN, STUFFING
  • BEEF STROGANOFF HAMBURGER HELPER, CORN, MASHED POTATOES & BEEF GRAVY
  • GRILLED CHICKEN SALADS

SNACKS:

  • homemade uncrustables
  • mini peppers, snap peas, and hummus
  • smoothies

BREAKFAST: breakfast mix of eggs, Jimmy Dean sausage, and sliced cheese brats (that I fried up), pancakes, and fruit. The kids also love honey vanilla yogurt with granola and blueberries.

DRINKS: In the summer my family loves that I keep fresh tea and lemonade in the fridge so it’s easy to grab and go!
