BLUEBERRY BREAD

Fall baking has begun!

My dad used to make blueberry muffins on Saturday mornings when I was growing up so every time I smell this baking, I think of him. Blueberry bread always smells like a Saturday morning!

BLUEBERRY BREAD

Ingredients:

  • 2 cups flour
  • 3/4 cups sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 large eggs
  • 1/2 cup coconut oil
  • 1/2 cup warm milk
  • 2 tsp vanilla
  • 15 drops Lemon Vitality*
  • 2 cups blueberries (fresh or frozen)

How to make:

  • Preheat oven to 400° ( I do 375°).
  • In a large bowl, mix flour, sugar, baking powder, and salt.
  • In another bowl, mix together eggs, oil, and milk.
  • Add vanilla and Lemon Vitality, if using.
  • Pour wet ingredients into dry ingredients. Stir until combined.
  • Gently fold in blueberries.
  • Fill loaf pan or muffin pan.
  • If you’re making muffins, bake for 20-25 mins. If you’re making a loaf, bake for 40-50 mins. Ovens vary so watch to find the right cooking time for you.
  • Cool 5 mins and then remove from pan to cool completely.
